Recipe: Salsa Chicken

Salsa Chicken

Ingredients:
4 chicken breasts
1 package taco seasoning
1 cup salsa
1 cup shredded cheese
dollop of sour cream (garnish - optional)

Directions:
Preheat oven to 375 degrees. Place chicken in a 9 by 13 dish. Sprinkle both sides of breasts with taco seasoning and pour salsa over the chicken. Bake at 375 for 25-30 minutes, remove chicken from oven and sprinkle evenly with cheese. Put back in the oven and continue baking for an additional 3-5 minutes, until the cheese is melted. Top with sour cream if desired. Serve with Spanish rice and mexi-corn.

The Verdict:
We really loved this recipe, I followed it exactly and it turned out great. It's become one of our favorites that we eat on a regular basis (whenever I have good chicken in the house) and it's great for using food storage (we always have salsa from the LDS Cannery as well as dehydrated bell pepper that we add to frozen/canned corn to spice things up a bit).
