Red Beans & Sausage
Ingredients:
1 lb bulk sausage
1 onion, chopped
1 can red beans
2 tsp red chilies
1 can crushed tomatoes
1 garlic clove, chopped finely
1 Tbs. oil
1 tsp taco seasoning
Directions:
Brown sausage, onion and garlic. Add remaining ingredients and simmer 30 minutes. Serve over rice, sprinkled with cheese and a dollop of sour cream.
What I did: I use 1 regular sized can of kidney beans, and 1 regular sized can of diced tomatoes with chilies in it (so I don't actually add any of the red chilies to it)
The Verdict: The very first time I made this dish, I didn't think it was going to be very good, especially since the sausage was a weird white color (we usually eat ground beef) but in the end this has become one of our staple dishes! We love it and it's so easy, we use our awesome rice cooker which has a delay timer, so dinner is always ready just when we want it to be! So delicious, and so inexpensive!
